Creamy Mussel Chowder

  1. Clean and debeard the mussels. Discard any mussels that are open or broken.
  2. In a large pot, cook the bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  3. Add the onion, garlic, celery, and potatoes to the pot. Cook until the vegetables are softened.
  4. Add the bay leaves, thyme, fish stock, and mussels to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes or until the mussels have opened.
  5. Remove the mussels from the pot and set aside. Discard any mussels that did not open.
  6. Remove the bay leaves and thyme sprigs from the pot. Blend the soup until smooth using an immersion blender.
  7. Return the soup to the pot and stir in the heavy cream. Season with salt and black pepper.
  8. Add the mussels back to the pot and cook for an additional 2-3 minutes.
  9. Serve the creamy mussel chowder hot, garnished with the crispy bacon.
